“Glycemic index” is a term used to describe how quickly food is converted into sugars by the body. High glycemic foods can convert fast, leading to a rapid increase in insulin production to handle the high sugar load. Over time, this can cause health complications, such as pre-diabetes and diabetes.
Low-glycemic foods keep the body in balance by keeping blood sugar levels normal. Healthy, low-carb foods include non-starchy vegetables such as broccoli, greens, bell peppers, cauliflower, zucchini, summer squash, radishes, and virtually all nuts and seeds.
